ChorChori | Bengali Style Mixed Vegetable Medley

Hi Supermoms,

Bengali Cuisine is so flavourful and you must have guessed  that I am already in love with it. I have been trying various Bengali recipes recently and this recipe is a keeper. It is so delicious and wholesome. A versatile dish - ' Chorchori'  loaded with flavours of whole spices , you can serve this mixed vegetable sabzi as a side to rotis or rice. 

'Charchori' or 'Chorchori ' means a mishmash  of vegetables. The vegetables are fried over a wide pan and they char and give out a sizzling sound and hence the name ‘ Chorchori’. Traditionally the Panchmishali Charchari meaning the five vegetable medley is most popular and is made using yellow pumpkin, ridge gourd, brinjal, broad beans  and potatoes. 




ChorChori | Bengali Style Mixed Vegetable Medley



ChorChori | Bengali Style Mixed Vegetable Medley :

Preparation time : 15 minutes
Cooking time : 20 minutes
Serves : 4
1 cup = 250 ml cup

Ingredients :

1/4 cup Yellow pumpkin (cubed)
1 long brinjal ( chopped)
1 large potatoes ( cubed)
1 small cauliflower ( chopped into florets)
1 carrot ( peeled and cubed)
10 french beans  ( finely chopped)
2-3 green chillies ( slit length wise)
2-3 garlic pods ( optional)( finely chopped)
1/8 teaspoon turmeric powder ( 1/4 teaspoon)
1/4 teaspoon red chilli powder 
1/2 teaspoon Sugar
Salt ( to taste)
 For tempering:
mustard oil ( 1 tablespoon)
Panch phoran ( 1 teaspoon)
1 bay leaf
2 cloves
1 dry red chilli ( roughly torn)

For garnish(optional) :

Finely chopped cilantro

Method:

1.Heat a wide pan/kadai with mustard oil.
my ingredients are chopped and ready

2.When the oil starts to smoke, temper with panch phoron and whole spices.
Panch phoran -fennel seeds,cumin,fenugreek,mustard , nigella seeds

3.When the seeds start to splutter, add garlic, green chillies and onions and fry till the onions turn transparent.


4. Sprinkle turmeric powder, Red Chilli powder, salt and cook covered till the vegetables are tender.





5.Add sugar and cook over high flame for one minute and switch off.
6.Garnish with cilantro (optional)and serve along with rice or roti.

Chef Tip : You can add a 1/4 cup of water to the vegetables and then cover and cook.
